Unbelievable Fruit Salsa

This fruit salsa is so good and so versatile I make it fro everything from summer picnic, to more formal holiday parties, to just because. I got this recipe from. My step-daughter and her husband when I was visiting 10+ years ago and ever since I made the first time I consistently get requests. It is so easy, so good and makes enough that it is a go to for any pot luck or dip day.

This is so easy to make, the chopping of the fruit is the hardest part. My little guy loves using the Pampered Chef Handy Scrapers to pick everything up as a I chop it and add to the bowl. Also while this only uses one apple, he loves to use the Pampered Chef Apple Corer and Peeler as well. He is not old enough to ull the strawberries, but certainly enjoys mixing everything together. This is completely a throw everything into eh bowl, mix it and let sit. I serve this with Cinnamon Pita Chips as a first choice, but this is also great with cinnamon graham crackers, vanilla wafers and animal crackers. If you have any leftovers, try it on pound cake or angel food cake or as a topping for ice cream. It is good on just about anything and even just by itself.

What You Need

2 kiwis, peeled and diced 
1 Golden Delicious apples- – peeled, cored and diced
8oz raspberries 
8oz of blackberries 
1lb strawberries 
2T white sugar 
1T brown sugar 
3T fruit preserves, any flavor 
Cinnamon chips

Unbelievable Fruit Salsa Instructions

per and dice the kiwis and apples into a bowl. I half or quarter the blackberries and raspberries depending on theirs size – typically larger in the summer. Hull the strawberries and dice to the same size as the other fruit. Add the sugars and fruits preserves. I have used strawberry, blackberry and raspberry preserves and even a combination of those depending on what I have on hand. Then let chill for at least 15 minutes. I find it I make it the night before or the morning of a party it is perfect. These go well with the Homemade Granola Bars.

Ingredients

  • 2 each Kiwis peeled and diced
  • 1 each Apple peeled, cored and diced
  • 8 oz raspberries diced
  • 8 oz of blackberries diced
  • 1 lb strawberries diced
  • 2 T white sugar
  • 1 T brown sugar
  • 3 T fruit preserves any flavor
  • Cinnamon chips

Instructions

  • In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, and strawberries.
    Diced fruit
  • Add white sugar, brown sugar and fruit preserves.
  • Cover and chill in the refrigerator at least 15 minutes.
  • Serve with cinnamon chips, vanilla wafers, cinnamon graham crackers or animal crackers.

Notes

Good to make the night before.  Leftovers are great on ice cream, pound cake and any so many other things.
